Sugar 300 g
Flour 280 g
Eggs 4 pieces
Starch 30 g
Butter cream 200 g
Lemon 1 pc
Mint 2-3 leaves
Rectangular aluminum shape 1 pc
Preheat the oven to 180’.
Butter should be soft, at room temperature.
Take 2 spoons of flour, leave it aside for condiments
Add 200 g of sugar, flour (without 2 spoons) & butter in a deep bowl
Mix them thoroughly & Knead the dough
Put it in the baking pan, it should have even thickness.
Bake it for 15 minutes at 180′.
Take it out of the oven and leave it to cool.
Decrease the temperature of the oven to 170′.
Mix eggs and sugar in a deep bowl
Add 2 spoons of flour and mix
Rub lemon peels and along with lemon juice.
Whisk it for 2 minutes to make it homogeneous.
Add starch, mix & pour it over the pie shell
Bake it for 30 minutes at 170′.
When the top of the bars are are soft leave them in a fridge for 3-4 hours, or better for a night
Take it out of the pan & cut into tick boxes.
Decorate it with mint before serving
